This is a favorite dish from long ago.  I fixed it a few too many times while we were in graduate school.  It was retired long enough that it can make an occasional comeback now.  It is a good recipe to fix with my protegée because it’s simple and involves lots of stirring.  She taught me something as we fixed it- she wanted to cut up the tortilla with her safety scissors instead of me using the knife to do it.  Her process worked great.

Guacamole

3 avocados, flesh removed with a spoon, broken up slightly

1/4 cup red pepper, cut into medium chunks

1/2 serrano pepper, seeded

1/2 teaspoon salt

2 tablespoons lime juice

If using food processor, place garlic, jalapeño pepper, and onion in bowl and process by pulsing until minced.  Add avocado, breaking up slightly as you remove flesh from skins.  Add plum tomato as well, and process until smooth.

If making by hand, mash avocado in large bowl, and add other ingredients minced finely as appropriate.  Stir well and enjoy.

(Trick of the trade:  To remove the avocado pit, strike it with a large knife, hitting it with the blade near the handle of the knife.  Turn slightly to the side and the pit should come right out.)
